Cans of whole green beans (Del Monte or Le Sueur)
*One can serves about two people. The beans do shrink down while cooking.
One strip of fatback per can (or to taste)
One splash vegetable oil per can
A little salt
First: Pan fry fatback (Ginnie) OR Boil fatback in a little bit of water for about ten to fifteen minutes (Maleah). If you don't have fatback, add extra oil.
Then: Pour can of green beans into the pot (including liquid from the can). Cover the green beans with water. Add vegetable oil and salt. Bring to a boil and continue on a low boil, adding a little water throughout the process to make sure they are covered. Cook for a few hours. As long as you keep adding water, you cannot really over cook. But be careful not to add too much water. "We are terrible at recipes," said Maleah.
