Meat sauce:
In dutch oven or deep frying pan, heat 2 Tbsp cooking oil over medium heat.
Add: 1 cup of chopped onion
3/4 cup of chopped bell pepper
3 minced cloves of garlic
Cook for several minutes and add approximately 1 and 1/2 lbs of ground beef.
Stirring frequently, cook about 10 minutes or until beef is browned.
Add one 6oz can of tomato paste, one 8 oz can of tomato sauce and one 16 oz can of tomatoes, stirring frequently. Add 2 tsp of sugar, 1 tsp of salt, 1 tsp pf Italian seasoning, and 1/4 tsp of pepper. Reduce heat and simmer. (The longer you cook it, the better.)
Cook lasagna noodles according to directions on box.
In bowl, beat 2 eggs and mix with one 16oz container of cottage cheese.
In 13x9x2 roasting pan spread 3/4 cup of meat sauce, cover with a layer of lasagna noodles. Spread half of remaining meat sauce over noodles. Cover with half of cottage cheese mixture. Sprinkle with 3 oz of shredded Parmesan cheese and 4 oz of shredded mozzarella.
Add another layer of noodles. Spread remainder of meat sauce over noodles, spread remaining cottage cheese mixture over meat sauce and top with shredded Parmesan and mozzarella and 5-6 swiss cheese slices. Bake at 325-350 for 1 hour or until cheese is melting and bubbly.
