Bopa’s Low Country Boil

Serves 8


Ingredients:

2-3 pounds smoked sausage 3-4 pounds whole new potatoes, scrubbed (you want 4-5 potatoes per person)

1 whole onion, peeled

12 ears of fresh corn, husks and silk removed

2 pounds shrimp (unpeeled) 1 pound whole okra pods*

1 crab boil bag seasoning

1/4 cup (or a southern 'handful' of) salt

1 lemon, quartered

1/2 cup white vinegar

Directions:

In a large pot, combine 6 quarts water, vinegar, lemon slices, seasoning bag and a handful of salt. Cover and bring to a boil. Reduce the heat and simmer for 5 minutes. Add new potatoes, sausage and onion. Cook about 10 to 15 minutes. Add okra* and then corn on the cob, cook about 10 minutes. When returned to a boil, add shrimp, cook about 5 minutes or until shrimp turn pink. Drain all ingredients and put on serving platter or a table covered with plastic and a newspaper. Serve with cocktail sauce or butter sauce.

*While okra was not an ingredient in Bopa's LCB recipe - the Simpsons started adding okra to our's around 2010.


**On September 6, 2020 Ginnie stated with firm conviction that Bopa never made - and would never have made - a Low Country Boil.


Butter Sauce:

1/2 pound butter

4 teaspoons Worcestershire sauce

2 teaspoons fresh lemon juice
