Makes 8-9 dozen
Preheat oven to 350 degrees.
1/2 cup butter or margarine
1/2 cup vegetable shortening
4 cups (about 16 oz.) finely grated cheddar cheese
2 1/2 cups all purpose flour
1 teaspoon salt
1 teaspoon dry mustard
1/8 teaspoon cayenne pepper (I* use 1/4 teaspoon) Judy*
With electric mixer at medium speed to high speed, cream butter, shortening until soft. Add cheese. Mix well.
Sift flour, salt, mustard, cayenne together. Add in 3 addition. Mix well after each addition. Use cookie gun. Bake 10-12 minutes at 350 degrees or until just starting to turn golden brown at edges. Makes 8-9 dozen.
Use a mouli grater for best results when grating cheese.
